Betty Crocker's Apple Cranberry Crumble

Recipe here.

Ingredients:

4 cups 1/2 inch slices peeled apples (about 4 medium apples)
1 cup fresh or frozen cranberries
1 teaspoon grated orange peel
1/2 cup granulated sugar
3/4 cup old fashioned oats
1/2 cup packed brown sugar
1/2 cup all purpose flour
1/2 cup butter or margarine, softened
1 tsp ground cinnamon

Directions:

1. Heat the oven to 375. Toss apples, cranberries, orange peel and granulated sugar in a large bowl.

2. Mix remaining ingredients in medium bowl until crumbly. Press 1 cup of the oat mixture in ungreased square baking dish, 8x8x2 inches. Spread apple mixture over top. Sprinkle with remaining oat mixture.

3. Bake 40-45 minutes or until golden brown and apple mixture is bubbly around edges. Cool 30 minutes. Serve warm.

My Notes:

I like to use brown sugar instead of the granulated sugar in the apple mixture, and depending on the sweetness of the apples I will use less sugar, like 1/4 cup.

Marge's Gingersnaps - From Jennifer Garner posted on Instagram

3/4 cup shortening
4 tablespoons molasses
1 egg
1 cup sugar
2 cups all-purpose flour
3 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1 teaspoon salt (we found this to be too much salt, I'd cut it in half at least)
Extra sugar for rolling

Preheat oven to 350 degrees

Combine the wet ingredients with the dry.

Using two spoons or a small ice cream scoop, roll batter into balls and then roll them in the extra sugar.

Bake for 10-15 minutes until done.

These have really lovely flavor, and even though we found then too salty to just eat they go really nicely with a bowl of ice cream.

Blueberry Lemon Bars

This tasty recipe comes from Wood & Spoon and can be found here.
For the crust:
1 cup unsalted butter, room temperature
3/4 cup sugar
1 teaspoon vanilla
1 1/2 teaspoon lemon zest
1 1/3 cups flour
1/2 teaspoon salt

For the filling:
3 cups blueberries
Juice of 1 lemon
1/3 cup sugar
1 tablespoon cornstarch

Instructions:
Preheat the oven to 350 degrees. Line a 9″ square pan with aluminum foil, covering all sides of the pan.

Cream the butter and sugar together until well combined, about 1 minute. Add the vanilla and lemon and stir to combine. Scrape the bowl, then add the flour and salt. Stir on low speed until clumps begin to form. Scrape the bowl as needed, continuing to stir only until combined. Pat out 2/3 of the crumbs into the bottom of the prepared pan.

In a medium sized bowl, combine all of the ingredients for the filling and toss gently. Strain any extra juice from the berries and sprinkle them evenly over the crust.

Crumble the remaining dough over the top of the blueberries and crust.

Place in the preheated oven and bake until the crumbs on top are golden brown, about 1 hour. Allow to cool completely before cutting.
