4 eggs
1 3 oz. pkg instant chocolate pudding mix
½ cup oil
1 tesp vanilla
1 tablsp instant coffee
2 cups seeded, peeled, grated zucchini
Mix all ingredients together for 5 minutes. Pour into well-greased bundt pan. Bake 1 hour at 350.
