Cheeseburger Soup

½ Lb. Ground beef
¾ cup chopped onion
¾ cup shredded carrots
¾ cup diced celery
1 tsp. dried basil
1 tsp. dried parsley flakes
4 Tbsp. butter
3 cups chicken broth
4 cups diced potatoes
¼ cup flour
2 Cups Velveeta Cheese cubed
1 ½ cup milk
¾ tsp. salt
¼ tsp pepper
¼ cup sour cream

Brown beef & set aside. Sautee onion, carrots, celery, basil & parsley with 1 tbsp. butter until vegetables are tender.

Add broth, potatoes & beef and bring to a boil. Reduce heat-cover and simmer until potatoes are tender.

In a small skillet-melt remaining butter. Add flour and cook until bubbly. Add this mixture to soup until it thickens.

Reduce heat to low – add cheese, milk, salt & pepper. Cook until cheese melts.
Remove from heat & blend in sour cream. Can put in a crockpot.
