1 cup rice, uncooked
1 4 oz can green chilis - drained and chopped
1/2 lb Monterey jack or cheddar cheese-grated
1 1/4 cups sour cream
2 tbsp butter
Salt and pepper to taste
Set aside 1/4 of the cheese. Mix remaining ingredients gently but thoroughly. Place in a 2 quart casserole dish. Sprinkle top with remaining cheese. Dot with butter. Bake uncovered in 350 degree oven for about 30 minutes or until golden brown. Goes great with empanadas.
