Big Red Cake

Growing up, this was known in our house as the Nebraska cake. This is because of the red color, and because the recipe came from my Grandma Obering. It wasn't until much later I realized this is a red velvet cake recipe. It will always be the Nebraska cake for me!

For the cake:
1/2 cup shortening
1 1/2 cup sugar
2 eggs
2 oz red food coloring (or more-depending on how red you want it)
2 1/2 cups and 1 tbsp cake flour
1 tsp salt
1 cup buttermilk
2 tsp vanilla
1 tbsp vinegar
1 tsp soda

Cream shortening with sugar. Add eggs and beat well. Add food coloring. Sift flour and salt and all alternately with buttermilk and vanilla. Beat well. Mix remaining ingredients and blend into batter. Bake 25-30 minutes at 350 in 2 8 inch pans.

For the frosting:
3 tbsp flour
1 cup milk
1 cup sugar
1 cup butter
1 tsp vanilla

Cool flour and milk until thick. Cool. Cream butter, sugar and vanilla. Add cooked ingredients and beat until like whipped cream.
