6 cups tomatoes
3 medium onions (to taste)
1/2 cups of celery
1 cup bell peppers (to taste)
1 tablespoon sugar
1 teaspoon salt
1/2 teaspoon pepper
1/8 cup white vinegar
hot peppers (1 or 2 is a mild sauce, 2-4 is a medium sauce, 4-8 is a hot sauce)
Put tomatoes in boiling water. After about 5 minutes place tomatoes in cold water and peel skin off and dice.
Mix all the ingredients and boil at least an hour. The longer they boil, the thicker the sauce. Skim off the top regularly.
Boil water and put jars to be filled and the lids in the boiling water just prior to filling. Fill jars with boiling salsa, whip rimes and seal tight. Each batch makes about 4 pints.
