"Faux... you mean gross, right?" Well, not really. "But it doesn't have potato in it at all, WTF?" Granted, but it is tasty and, more importantly, I can eat it. I don't want it every day, but it's not bad at all. This is something I'll play with a bit. Might be really nice with a southwestern flair (a bit of corn and some smoked paprika, chili powder, cumin).
Ingredients
1/2 head cauliflower, rinsed and cut into equal size chunks
1/3 c. low fat cottage cheese
1 tsp. dill weed
1 clove garlic
Salt and pepper to taste
Cook cauliflower in water until fork tender. Put ingredients in a food processor and blitz for about a minute. Serve.
It'll do.
