Braciole

2  1 pound beef rounds (or flank steaks)
1/2 cup bread crumbs (see bread crumb recipe)
3 cloves garlic, minced
4 tablespoons grated pecorino romano cheese
1 tablespoon parsley, chopped
Salt and pepper
Kitchen twine

Pound beef about 1/8 inch flat.  Sprinkle half of all the ingredients on each piece of beef.  Roll, or fold into a rectangle (to keep al the good stuff in side) and tie with twine to hold the shape.
